This recipe is a little complicated, but I'll share my modifications here. Some of these modifications make it easier, and some make it healthier.
First of all, here is the recipe: vegetarian pad thai
We have been buying this tamarind concentrate instead of using fresh tamarind to make the sauce. I use about 1/3 c. and add almost a cup of hot water.
The recipe doesn't call for veggies (I know, right?) so I always add carrots and broccoli, and whatever else I can find in the fridge. I just sauté them up separately and then add them with the tofu at the end.
I hope you enjoy this recipe. I'm really pleased with it, and we've made it a bunch of times now. I always make a double recipe of the pad thai sauce so that the next time, I just have to cook up the veggies and noodles, and it's almost done! Ever since we made this for the first time, we don't really go out for thai food anymore... so I consider this a win!
